Ingredients:
5 dried ancho chilies, chopped, stemmed, seeded. Chipotle also works. Reconstitute in 1:2 vinegar to water.
1.5 pounds italian sausage, remove casing! Half hot half mild for spicier chili!
1.5 pounds ground beef
half each of large white onion, sweet onion, and red onion, diced
half cup diced celery
half cup carrots, also diced
5 cloves garlic, sliced (pressed is also good)
1/2 teaspoon salt
6 oz tomato paste (small can)
1/2 cup dry red wine
2 14.5 oz cans diced tomatoes (or equivalent fresh tomatoes)
1/8 cup worcestershire sauce
1 8 oz can of kidney beans
1 8 oz can of pinto beans
1/8 cup honey (eyeballing is fiiine)
Chili powder, cumin, parsley to taste (fresh is good, too)
Directions:
Reconstitute chilies, puree until smooth
Large, deep skillet: sausage and beef, cook until evenly browned
Strain out meat drippings. Saute onions, celery, carrots, and garlic in meat drippings. It’s okay to cook celery and carrots slightly earlier. Add salt when onions are translucent. Add tomato paste, heat is medium-medium high. Caramelize tomato paste. Scrape pot well, pour in dry red wine to deglaze pan. Scrape more! Stir in cooked meat, tomatoes, worcestershire sauce, and basic seasoning, bring to a boil. Stir in honey and pureed chili mixture. Carefully add beans. Simmer 3 hours, stirring occasionally, season to taste during this time.
Dice to your satisfaction:
1 small bell pepper, seeded
1 small onion
3-4 cloves garlic
1 2″ piece fresh ginger
2 small zucchini
3-4 regular fresh mushrooms
2 skinless boneless chicken thighs
Saute in 2 tbs oil (NOT olive) until chicken is done (about 7 minutes)
Toss in 1/3 cup each chopped almonds and cashew pieces, stir well
Melt 1 Tbsp cornstarch and 2 Tbsp dark brown sugar in 2-3 Tbsp lemon juice
Pour over contents of pan, stirring, until sauce thickens
Is good. Costs about $4 and feeds 2 really well, takes maybe 10 minutes
(I cheat: I buy the veggies off the salad bar)
